Cheesy Ham Chowder

List of Ingredients
- 2 T bacon grease or 10 bacon strips, diced
- 1 large onion, chopped
- 1 c diced carrots
- 3 T flour
- 3 c milk
- 1 1/2 c chicken broth or ham broth
- 2 1/2 c cubed potatoes
- 1 (16 oz) bag frozen corn
- pepper to taste
- 3 c shredded cheddar cheese
- 2 c cubed fully cooked ham (or chicken breast)
Instructions
- In a large saucepan, cook bacon over medium heat until crisp. Remove to papter towels to drain. Or in a large saucepan, heat bacon grease.
- In the drippings, saute onion and carrots until tender. Stir in flour until blended.
- Gradually add milk and broth. Bring to a boil; cook and stir for minutes or until thinkened.
- Add the potaties, corn and pepper. Reduce heat, simmer, uncovered, for 2 minutes or until potatoes are tender.
- Add cheese and ham; heat until cheese is melted.
- Optional: Stir in bacon.
Final Comments
With the bacon you set aside, let everyone get their own. The soup is best with a little bacon on top. It is nice and crispy.
