    Cheesy Ham Chowder

    List of Ingredients


    • 2 T bacon grease or 10 bacon strips, diced
    • 1 large onion, chopped
    • 1 c diced carrots
    • 3 T flour
    • 3 c milk
    • 1 1/2 c chicken broth or ham broth
    • 2 1/2 c cubed potatoes
    • 1 (16 oz) bag frozen corn
    • pepper to taste
    • 3 c shredded cheddar cheese
    • 2 c cubed fully cooked ham (or chicken breast)


    Instructions


    1. In a large saucepan, cook bacon over medium heat until crisp. Remove to papter towels to drain. Or in a large saucepan, heat bacon grease.

    2. In the drippings, saute onion and carrots until tender. Stir in flour until blended.

    3. Gradually add milk and broth. Bring to a boil; cook and stir for minutes or until thinkened.

    4. Add the potaties, corn and pepper. Reduce heat, simmer, uncovered, for 2 minutes or until potatoes are tender.

    5. Add cheese and ham; heat until cheese is melted.

    6. Optional: Stir in bacon.



    Final Comments


    With the bacon you set aside, let everyone get their own. The soup is best with a little bacon on top. It is nice and crispy.
