MOZZARELLA W/ GARLIC, TOMATOES AND BASIL
List of Ingredients
1 C. dried tomatoes
1 C. boiling water
3/4 lb. fresh Mozzarella, sliced
8 cloves garlic, minced
1 tsp. chopped fresh thyme
1 tsp. chopped fresh marjoram
1 tsp. peppercorns
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
Approximately 1 1/4 C. extra-virgin olive oil
Recipe
Place tomatoes in a small bowl. Pour boiling water over them and let sit for at least 15 minutes, or until soft. Drain and set aside.
In a sterilized quart jar with a lid layer the ingredients, starting with half the tomatoes on the bottom. Add half the garlic, herbs, and seasonings. Put all the Mozzarella slices on top. Finish with a layer of the remaining tomatoes, garlic, herbs, and seasonings. Pour the olive oil over the final layer, tapping the jar to release air bubbles and ensure that the ingredients are completely covered. Attach lid and refrigerate for at least 24 hours. These will keep in the refrigerator for about a week.
