Roasted Garlic Goat Cheese Spread

1 head garlic
4 sun-dried tomatoes marinated in oil, minced
1 ounce chopped fresh basil leaves
1 package 5-oz. goat cheese
Recipe
Preheat oven to 350°F.
Peel off any loose, papery outer layers of garlic and trim enough off the top to expose all of the cloves. Place garlic on square of aluminum foil. Drizzle generously with some oil from the sun-dried tomatoes (olive oil is also fine). Seal foil and bake 1 hour, or until tender. When cool enough to handle, squeeze pulp from each garlic clove. Place garlic pulp in a bowl with tomatoes and basil; mash with fork to blend.
Crumble cheese over mixture and stir until well blended. Form into log about 1½ inches in diameter. Wrap in plastic wrap and refrigerate several hours or overnight.
To serve, slice cheese into rounds and arrange on platter with baguette slices.
