• 4 green onions
• 1 1-inch piece fresh ginger, sliced
• 1 Scotch bonnet pepper, stem and seeds removed (optional)
• 2 tablespoons cooking oil
• 3 cloves garlic
• 2 teaspoons Jamaican jerk seasoning
• 1/4 cup lime juice
• 1 1-1/4- to 1-1/2- pound beef flank steak
Recipe
1. For jerk marinade, combine all ingredients except steak in a blender container; cover and blend until smooth. Diagonally score both sides of the steak at 1-inch intervals, making a diamond pattern. Place the steak in a glass dish; spread the marinade over the steak. Grill right away or cover steak with plastic wrap and marinate in the refrigerator for 4 to 24 hours.
2. Grill the steak on the rack of an uncovered grill directly over medium heat to desired doneness, turning once. (Allow 12 to 14 minutes for medium doneness.) Transfer the steak to a cutting board; cut across the grain into 1/8- to 1/4-inch-thick slices.
