    MAIN: Mesquite Mixed Grill

    • 2 cups mesquite wood chips
    • 4 boneless pork top loin chops, cut 3/4 inch thick (about 1 pound)
    • 4 small leeks or 1 medium red sweet pepper, seeded and cut into 1-inch pieces
    • 1/8 teaspoon garlic salt
    • 1/4 teaspoon black pepper
    • 8 ounces fully cooked turkey Polish sausage, cut into 4 equal portions
    • 1/3 cup whole-grain mustard
    • 2 teaspoons white wine vinegar or cider vinegar
    • 1 teaspoon snipped fresh tarragon

    Recipe

    1. At least 1 hour before grilling, soak wood chips in enough water to cover. Trim fat from pork chops. If using leeks, rinse well, trim root end, and cut 3 to 4 inches off each top and discard. Sprinkle garlic salt and black pepper evenly over chops and leeks or sweet pepper.

    2. Drain wood chips. In a grill with a cover arrange preheated coals in even layer. Sprinkle wood chips onto coals. Place the chops and leeks or sweet pepper on grill rack directly over medium coals; cover grill and cook for 5 minutes. Turn chops; add the sausage to grill. Cover and grill 4 to 6 minutes more or until the chops are slightly pink in center and juices run clear, turning sausage once.

    3. Meanwhile, combine mustard, vinegar, and tarragon. Serve as a dipping sauce with chops, sausages, and leeks or sweet pepper.

    Makes 4 servings.

    Serving Suggestion: Serve this hearty meat mixture with grilled garlic bread.
