Baked Blintz Casserole

Filling:
One 6 ounce package cream cheese (room temperature)
1 cup low-fat cottage cheese
1 egg beaten
1 Tablespoon sugar
1 Tablespoon vanilla
Batter:
1/2 cup butter or margarine
1/3 cup sugar
4 eggs
1 cup flour
2 teaspoons baking powder
1 cup plain yogurt
1/2 cup lowfat sour cream
1/2 cup orange juice
Recipe
Preheat oven to 350°F. Grease and flour a 9x11 baking pan. In a small bowl, beat cream cheese, add cottage cheese, egg, sugar, and vanilla, mix well and set aside.
In a large bowl cream together butter and sugar. Add eggs one at a time beating well. Add flour and baking powder. Mix in sour cream and yogurt and add orange juice.
Pour 1/2 of batter into prepared casserole dish, layer in filling and then top with remaining batter. Bake 45 minutes. Let cool about 10 minutes before slicing. Serve with fresh berry sauce or raspberry preserves and a dollop of lite sour cream. Garnish with mint or fresh flowers.
