    Peach n’ Cheese Blintzes

    Crepe Batter Ingredients
    (makes 10 - 12 crepes)

    1 Cup flour
    ¼ teaspoon salt
    1 Tablespoon sugar
    3 eggs
    2 Tablespoons margarine, melted (cooled)
    1 1/3 cups milk,
    1 teaspoon vanilla

    Peach n' Cheese Blintz Ingredients

    8oz Cream Cheese
    4oz Cottage Cheese
    1 T Powdered Sugar
    Grated rind of 1/4 orange
    Grated rind of 1/2 lemon
    ½ C fresh or canned peach slices, diced
    3-4 drops lemon flavoring

    10 crepes See crepe recipe
    1 C fresh or canned peach slices (preserved by 4-H’er)
    2 t cornstarch
    2 drops lemon flavoring

    To prepare Crepes

    Mix all ingredients in a blender until batter is smooth.
    Heat small (8 inch) fry pan over medium heat.

    Place 1 teaspoon oil or margarine in pan and continue heating until hot enough to make a drop of water sizzle

    Pour ¼ cup of batter into the hot pan.

    Tip the pan so the batter spreads over the bottom of the pan.

    When the underside of the crepe is lightly browned turn it over and lightly brown other side.

    Remove crepes from pan

    To prepare Peach n' Cheese Blintzes

    Heat oven to 400 degrees
    Mix cheeses, sugar, zests, lemon flavoring and diced peaches. Spread each crepe with about 1 ½ T. of the cream cheese mixture. Roll up like a jelly roll. Place blintzes on a cooking sheet and bake in a 400 degree oven for ten minutes.

    In a small saucepan, combine remaining peach slices, cornstarch and lemon flavoring. Cook over low heat until mixture thickens. Spoon over the blintzes. Makes 10-12 crepes. Store in an airtight container in the refrigerator.
