Recipe Introduction
This is a wonderful cake. You just have to try it. For easy splitting of the cake layers, I poke toothpicks around the center of the cake as my 'drawing' line. Then I take dental floss and lay it around the cake on top of those toothpicks and then grab each end of dental floss... cross it and gently pull... so the dental floss cuts the cake into two layers. Note: It's much easier to cut a cake that is COMPLETELY cool. It's easier to cut an 8-inch layer cake, too.
List of Ingredients
1 box devils food cake mix (not pudding in the mix)
1 block cream cheese (8-ounce), softened
2/3 cup of dark brown sugar
1 teaspoon vanilla
pinch salt
1 (8-ounce) container Cool Whip® non dairy topping. (Or 2 cups heavy cream, whipped)
Chocolate curls or cocoa (for garnishing top of cake)Recipe
Bake cake according to package directions for 2 (8-inch layers).. You can use 9-inch cake pans but it's easier to cut the 8-inch layers in half.
Let cake cool completely before attempting to slice in layers.
When cake is cool, use directions above to slice each layer horizontally so you will have 4 cake layers when done.
Mix cream cheese, brown sugar, vanilla and salt with electric mixer until fluffy.
Fold in Cool Whip® or whipped cream until all is incorporated.
Place one cake layer on plate and top with some cream filling. (about a generous cup of filling)
Top with another layer of cake and then more filling.
Top with third cake layer and then more filling.
Add top layer and spread the rest of filling on top.
Top with chocolate curls or sprinkle with cocoa.
Cake needs to be refrigerated.
Note: An easy way to make chocolate curls:.
Melt a cup of chocolate chips with a teaspoon of Crisco shortening and pour (about 1/4-inch thick) on the back of an ungreased cookie sheet or baking pan.
Let it sit until it firms up (don't refrigerate)and then take a spoon and scrape a long line of chocolate.
It will curl as you scrape.
Or use small metal pancake turner to form curls.
Hold pancake turner at 45° angle and scrape chocolate into curls.
