Cinnamon Cake with Apple Cider Sauce

1 1/2 cups all-purpose flour
1 cup brown sugar
3 tablespoons ground cinnamon
1/4 teaspoon salt
1/2 cup shortening
3/4 cup sour cream
1 teaspoon baking soda
1 teaspoon baking powder
2 medium egg
Apple Cider Sauce
2 apples, Rome, sliced medium
1 cup sugar
2 tablespoons cornstarch
1/2 teaspoon pumpkin pie spice
2 cups apple cider
1 tablespoon lemon juice
1 tablespoon margarine

Cake -
Heat ove 350* grease and flour square pan 9x9x2 inches. Mix flour, brown sugar, cinnamon and salt in large bowl. Cut in shortening, using pastry blender or crisscrossing 2 knives, until mixture is size of small peas: reserve 1/3 Cup. Beat in sour cream, baking soda, baking powder and eggs until well blended. Spoon into pan: spread evenly. Sprinkle reserved flour mixture over batter. Bake 30 to 35 or until toothpick inserted in center comes out clean. Cool completly.
Apple Cider Sauce -
Cut apple slices crosswise in half. Mix sugar, cornstarch and pumpkin pie spice in 2-quart saucepan: stir until well mixed. Stir in apple cider and lemon juice. Heat to boiling. Boil 5 minutes, stirring frequently (mixture will be slightly thickened). Stir in apples. Heat to boiling. Boil 1-2 minute's or until apples are crisp-tender; remove from heat. Stir in margarine. Cool slightly; serve warm.
Top each serving with vanilla ice cream and Apple Cider Sauce
