    8 3/4 cups all purpose flour
    2 tablespoons baking soda
    1 tablespoon salt
    5 1/4 cups sugar

    Recipe



    In a bowl combine all ingredients. Stir with a wire whisk until blended.
    Divide mixture into six portions, about 2 1/3 cups each. Store in
    containers and seal with tight fitting lids. Label and date Use within 12
    weeks. Make 13 1/2 cups mix.
    Premeasuring this mix into individual containers gives you all the
    convenience of a commercial mix at a fraction of the cost.

    This cake is even better the day after its baked.
    Applesauce Snack Cake

    1 pkg. snack cake mix
    1 egg
    1/3 cup vegetable oil
    3/4 cup applesauce
    1 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground allspice
    1/8 teaspoon ground cloves
    1/2 cup chopped nuts
    1 cup raisins

    Preheat oven to 325F. Pour Snack cake mix into ungreased 8 or 9 inch square
    pan and set aside.
    In a small bowl, combine egg, oil, applesauce, spices, beating with a fork
    to blend. Stir into Snack cake mix in pan and mix til smooth and blended.
    Stir in nuts and raisins. Bake 35 - 45 minutes until a wooden pick comes
    out clean. Cool makes 9 servings.


    Banana Walnut Snack Cake

    1 pkg. snack cake mix
    1 egg
    1/3 cup vegetable oil
    1/2 cup mashed ripe banana
    1/2 cup buttermilk, milk or water
    1/2 cup chopped walnuts

    Follow directions for mixing above but bake at 350F oven for 35 - 45 minutes
    or til done.



    Carrot Snack Cake

    1 pkg snack cake mix
    1 egg
    1/3 cup vegetable oil
    1 cup grated carrots
    3/4 cup orange juice
    1 teaspoon ground cinnamon
    1/2 cup chopped nuts

    Follow directions above mixing all ingredients except mix together. Them
    mix with prepared mix in pan. Bake 350F 35 - 45 minutes or til done.



    Cream Cheese Frosting

    3 tablespoons butter or margarine softened
    1 3 oz package cream cheese, softened
    1 2/3 cups powdered sugar
    1/2 teaspoon vanilla

    In a small bowl, cream butter or margarine and cream cheese until light and
    fluffy. Beat in powdered sugar and vanilla til smooth. Ice cooled cake.


    Date Chocolate Chip Snack Cake

    1/2 cup chopped dates
    3/4 cup boiling water
    1 pkg. snack cake mix
    1/2 teaspoon ground cinnamon
    1/3 cup vegetable oil
    1 egg
    1/2 teaspoon vanilla
    1/2 cup brown sugar, packed
    1/2 cup chopped nuts
    1/2 cup chocolate chips

    Preheat oven to 350F. In a small bowl combine dates and boiling water. Set
    aside. Pour mix in a 8 or 9 inch ungreased baking pan. Add cinnamon,
    vegetable oil, egg, vanilla, and cooled date mixture. Stir with a fork
    until all ingredients are blended. Top with brown sugar, nuts and then
    chocolate chips. Bake 35 - 45 minutes. Cool on rack.



    Gingerbread Snack Cake

    1 pkg snack cake mix
    3/4 cup hot water
    1/3 cup molasses
    1 egg
    1/3 cup vegetable oil
    1 teaspoon ground cinnamon
    1 teaspoon ground ginger
    1/2 teaspoon ground cloves

    Pour mix in baking pan. Mix other ingredients in bowl. Combine with mix,
    stir with fork to blend. Bake 350F for 35 - 45 minutes or til done.
    Serve with applesauce, lemon sauce, or whipped topping.


    Oatmeal Spice Cake

    3/4 rolled oats
    1 1/4 cups boiling water
    1 pkg snack cake mix
    1 egg
    1/3 cup vegetable oil
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1 teaspoon vanilla
    1/2 cup chopped nuts
    1/2 cup raisins
    Broiled Coconut Topping - below

    Preheat oven to 325F Pour boiling water over oats and set aside. Pour snack
    mix in 8 or 9 inch baking pan ungreased. In a medium bowl combine egg,
    vegetable oil, cinnamon, nutmeg and vanilla. Stir in nuts and raisins.
    Beat with a fork to blend. Stir in oat mixture, nuts and raisins then stir
    all into cake mix until evenly distributed. Bake 45 minutes or til done.


    Broiled Coconut Topping

    4 tablespoons butter or margarine
    1/3 cup brown sugar packed
    2 table spoons milk
    1/2 teaspoon vanilla
    1/2 cup shredded coconut
    1/2 cup chopped nuts

    While cake bakes prepare the topping. In a small saucepan, melt butter or
    margarine and mix in remaining ingredients. When cake is done spread
    topping on hot cake turn oven to broil. Place cake in oven 3 inches below
    broiling element. Watch carefully or it will burn just broil til bubbles
    and remove.


    Peach Cobbler

    1/4 cup butter or margarine, melted
    3 cups fresh peaches, sliced or 1 (28 oz can peaches drained)
    1/2 teaspoon nutmeg
    1 pkg snack cake mix
    1 teaspoon cinnamon
    3/4 cup milk
    1/3 cup vegetable oil
    1 egg
    1 teaspoon vanilla OR almond extract

    Preheat oven 350F. In an 11 x 7 inch baking pan put melted butter or
    margarine, peaches and nutmeg. Stir to coat peaches. In a medium mixing
    bowl, combine snack mix, cinnamon, milk, vegatable oil, egg, and extract.
    Pour over fruit mixture and bake about 30 minutes or until cake is set.
    Serve warm with ice cream if desired.



    Double Chocolate Snack Cake

    1 pkg snack cake mix
    2 tablespoons unsweetened cocoa powder
    3/4 cup water
    1 egg
    1/2 cup vegetable oil
    1 teaspoon vanilla
    1/2 cup semisweet mini-chocolate chips
    1/2 cup chopped nuts
    Note: I don't always have the minis so I just use what I've got.

    Preheat to 350F. Put mix in ungreased 8 or 9 inch square baking pan and add
    cocoa powder and combine. In a medium bowl, combine water, egg, vegetable
    oil, and vanilla. Beat with a fork to blend. Stir into cocoa mixture in
    pan til smooth and blended. Spring chocolate chips and nuts over batter.
    Bake 35-45 minutes or until done.



    Bumpy Road Snack Cake

    Make as above substituting buttermilk for water and omitting unsweetened
    cocoa powder.
