Orange Cream Cheesecake

Graham Cracker Crust:
1 cup graham cracker crumbs
1 tbsp sugar
1/4 cup Gay Lea Butter
Cheesecake:
3 eggs
1 egg yolk
3/4 cup sugar
pinch salt
1 tsp orange rind, grated
1 tbsp orange juice
1/2 tsp vanilla extract
1/4 cup all-purpose flour
2 cups 2% Nordica Cottage Cheese, puréed
1-1/2 cups Gay Lea Real Whipped Cream
sliced orange (garnish)
mint leaves (garnish)

Graham Cracker Crust: Mix graham cracker crumbs, sugar and butter thoroughly. Reserving 1 tbsp, press the mixture into an 8-1/2 inch (21.5 cm) spring form pan, covering bottom and sides. Chill.
Cheesecake: Beat eggs and egg yolk until light. Slowly add sugar, salt, orange rind, orange juice, vanilla and flour. Blend in cottage cheese. Fold whipped cream into the mixture. Pour into shell. Sprinkle reserved graham crumb mixture over top of cake. Bake for 1 hour 15 minutes at 350ºF (175ºC). Remove from oven and place on wire rack. Loosen cake from edge of pan. Allow to cool for 2 hours. Garnish with rosettes of Gay Lea Real Whipped Cream, slices of orange and fresh mint leaves.
Makes 8 servings. Preparation time: 30 minutes. Baking time: 1 hour 15 minutes. Cooling time: 2 hours.
