    A Ferszet's Green Chilli Stew

    30ml/1fl oz oil for browning
    2 large onions peeled and chopped coarsely
    2 (or more) cloves of garlic, peeled and crushed
    1kg/2¼ lb boneless pork or chicken cut into 2cm/¾ in cubes
    8 green New Mexico chillies, roasted and chopped (tinned green chillies are avaliable in the UK - use a small can - these are mild to moderately hot chillies; do not substitute jalapenos or any very hot chilli.)
    1 large boiling potato, peeled and cubed
    1L/1¾ pint stock or water
    salt and black pepper to taste

    Recipe



    1. In a heavy stewpot or saucepan, sweat the onions and garlic in a little oil until softened and translucent.

    2. Remove vegetables from the pan and brown the meat in small batches in the same oil. Add meat, onions, garlic, green chilli and potato to the pot.

    3. Cover with water or stock and simmer covered until meat is very tender; 1-2 hours. Check seasoning and add salt and pepper to taste.
