WHITE CUPBOARD CHILI

List of Ingredients
2 cups onions, chopped
2 cloves garlic, minced
1 tablespoon oil
3 cups vegetable broth or stock
1/2 cup white wine (optional)
5 cups canned white beans, drained
(try Great Northern, navy or Cannelloni beans)
1/2 cup canned green chilies, drained and chopped
2 tablespoons fresh chili, deseeded and chopped
2 tablespoons fresh cilantro, chopped
1 teaspoon dried oregano
1 teaspoon dried cumin
1 cup grated Monterey Jack cheese or soy sour cream (optional) Recipe
1. In a 3-quart casserole or bowl, combine onions, garlic and oil. Microwave on high for 3 minutes, or until onion is tender.
2. Add remaining ingredients, except cheese or sour cream. Cover with lid or vented plastic and microwave on high for 10 minutes. Stir. Cover and microwave on medium for 20 minutes or until flavors are combined.
