    In a small bowl whisk together:
    4 teaspoons of gelatin
    ¼ cup water

    You have to let this stand for 5 – 6 minutes or until the gelatin blooms
    TIP: You know it’s bloomed because it’s Elmer’s glue thick and completely dissolved


    Next
    In the food processor:
    Pulse 8 ounces of low-fat cream cheese (package)
    1 cup of pureed strawberries

    TIP: to end up with a cup of pureed strawberries you’ll need about 3 cups of strawberries
    3 tablespoons of lemon juice and the gelatin mixture.
    Mix until it’s completely smooth.

    Next
    In a large bowl using an electric mixer
    Whip 4 large egg whites
    ¾ cup sugar until they form soft peaks

    Next
    Pour the cream cheese mixture into the egg whites.
    Gently fold them together.
    Don’t over mix.

    Pour into any dish that will hold the mixture and over sliced strawberries that have been tossed with sugar and a little lemon juice.

    Refrigerate for at least 30 minutes or the whole day.
    You want to serve the dessert cold.
