    In a small bowl whisk together:
    4 teaspoons of gelatin
    � cup water

    You have to let this stand for 5 � 6 minutes or until the gelatin blooms
    TIP: You know it�s bloomed because it�s Elmer�s glue thick and completely dissolved


    Next
    In the food processor:
    Pulse 8 ounces of low-fat cream cheese (package)
    1 cup of pureed strawberries

    TIP: to end up with a cup of pureed strawberries you�ll need about 3 cups of strawberries
    3 tablespoons of lemon juice and the gelatin mixture.
    Mix until it�s completely smooth.

    Next
    In a large bowl using an electric mixer
    Whip 4 large egg whites
    � cup sugar until they form soft peaks

    Next
    Pour the cream cheese mixture into the egg whites.
    Gently fold them together.
    Don�t over mix.

    Pour into any dish that will hold the mixture and over sliced strawberries that have been tossed with sugar and a little lemon juice.

    Refrigerate for at least 30 minutes or the whole day.
    You want to serve the dessert cold.
