Asian Peanut Noodles

List of Ingredients
8 ounces Chinese egg noodles, fresh or dried
2 tsp sesame oil, divided
2 cups snow peas, trimmed, cut into thirds on the diagonal
4 Tbsp crunchy peanut butter
4 Tbsp brewed black tea
3 Tbsp low-sodium soy sauce
4 Tbsp rice vinegar
1/2 tsp hot chili oil
1 medium clove garlic, peeled and forced through a press
Recipe
Cook the noodles according to package directions. Drain and rinse briefly with cold water; drain well again. Toss with 1 teaspoon of the sesame oil.
Bring a small pot of water to a boil; add the snow peas and time 30 seconds. Drain and rinse with cold water to stop the cooking. Drain well.
In a medium bowl, whisk together the peanut butter and tea until smooth. Whisk in the remaining teaspoon sesame oil, the soy sauce, vinegar, chili oil and garlic. Add the snow peas to the noodles with the dressing. Serve immediately or set aside for an hour. Serve at room temperature.
Makes 4 servings.
