FREEZE AHEAD BUTTER COOKIES

1 lb. butter
1 1/2 c. brown sugar
1 1/2 c. white sugar
1/2 c. boiling water
3 eggs
2 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
6 1/2 c. flour
2 c. chopped pecansRecipe
Mix butter, sugars and boiling water until smooth and
well blended. Add eggs and mix well. Sift soda, salt and flour. Add pecans. Add dry ingredients to butter-sugar mixture and mix well. Divide dough into 4 portions. Form each portion into a log about silver dollar size around. Wrap each roll in plastic wrap. Place rolls in heavy duty freezer bag. Stores well up to 6 months in freezer. when ready to use take a roll from the freezer. Unwrap and slice off the number of cookies needed, 1/4 inch thick each. Bake on ungreased cookie sheet at 375 degrees for 6 to 10 minutes until edges brown. Makes 12 dozen small cookies.
