4 small apples, such as Gala
Lemon juice
3 tablespoons packed brown sugar
2 tablespoons butter, melted
3/4 teaspoon ground cinnamon
1/8 teaspoon apple pie spice
Dash salt
Ice cream
Caramel ice cream topping
Halloween sprinkles (optional)
Recipe
1. Preheat oven to 400°F. Spray baking dish with nonstick cooking spray. Wash and core apples. Cut apples in half lengthwise; brush cut sides with lemon juice. Carve face on each apple half.
2. Combine brown sugar, melted butter, spices and salt in small bowl; brush over all sides of apples, filling face cutouts. Place apples, cut side down, in baking dish. Pour remaining brown sugar mixture over apples in dish. Bake 18 to 20 minutes or until apples are tender.
3. For each serving, place scoop of ice cream in bowl and drizzle with caramel topping. Top with apple half and sprinkles, if desired.
Stuffed Shrunken Heads Preheat oven to 400°F. Wash and core apples; brush insides with lemon juice. Carve scary face on one side of each apple. Combine 1/4 cup brown sugar, 3 tablespoons melted butter, 1 teaspoon ground cinnamon, 1/8 teaspoon apple pie spice and dash salt in small bowl; brush over outsides of apples. Place apples in baking dish. Add 1/4 cup chopped walnuts, 1/4 cup raisins and 1/4 cup dried cranberries to brown sugar mixture; stuff into apples. Bake, covered, 30 to 35 minutes or until apples are tender. Serve warm with whipped cream or ice cream. Makes 6 servings.
