    3 tablespoons all-purpose flour
    1/2 teaspoon salt
    1 1/2 cups sugar
    3 cups milk
    3 large eggs
    2 pints strawberries, hulled and crushed
    1 tablespoon fresh lemon juice
    1 1/2 cups heavy or whipping cream
    1 tablespoon vanilla extract

    Recipe



    1. In heavy 3-quart saucepan, mix flour, salt, and 1 cup sugar; stir in milk. Cook over medium heat until mixture thickens slightly and boils, stirring frequently. Boil 1 minute.
    2. In medium bowl, with wire whisk, beat eggs slightly. Gradually beat about 1 cup hot milk mixture into eggs to warm them slightly and keep them from curdling. Pour egg mixture, in steady stream, into hot milk mixture remaining in saucepan, beating rapidly with whisk to prevent lumps.

    3. Cook over low heat, stirring constantly, until mixture thickens and coats the back of a spoon well, about 30 seconds. (Mixture should reach 160 degrees F.) Do not boil or mixture will curdle.

    4. Strain custard through sieve into large bowl. Refrigerate until cold, about 3 hours, stirring occasionally. (Or, place bowl with custard in larger bowl filled with ice water to come halfway up side of custard bowl. Chill custard completely, about 20 minutes, stirring every 5 minutes.)

    5. While custard is chilling, in medium bowl, stir crushed strawberries with lemon juice and remaining 1/2 cup sugar; refrigerate at least 20 minutes to blend flavors.

    6. Pour custard, cream, vanilla, and strawberry mixture into 4- to 6-quart ice-cream can or freezer chamber of ice-cream maker. Freeze as manufacturer directs. Serve immediately or freeze to harden.

    Each serving: About 170 calories, 3 g protein, 21 g carbohydrate, 9 g total fat (5 g saturated), 61 mg cholesterol, 90 mg sodium.
