Lamb Chops with Herbs & Garlic

4 garlic cloves, peeled
4 racks of lamb (14-oz. per piece)
1/2 cup olive oil, divided
1 cup chicken stock
2 teaspoons crushed dried rosemary
2 teaspoons crushed dried thyme
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Recipe
Simmer the garlic cloves in water until they are tender, about 15 to 20 minutes. Set aside.
Cut the racks into chops and brush them with 2 tablespoons of olive oil.
Saute or grill the chops over very high heat for approximately 1 minute on each side; they will be medium rare. Make a sauce by mixing the chicken stock, the remaining olive oil, rosemary, thyme and blanched garlic cloves. Bring the mixture to a boil and then reduce it to a simmer to keep warm until you are ready to serve.
