Mockamole (High-protein guacamole)

1 ripe Haas avocado
1/2 teaspoon salt
1 block silken tofu (10 ounces)
hot pepper sauce to taste
5 tablespoons fresh lemon juice
2 tablespoons fresh parsley or cilantro, chopped
2 small garlic cloves
Recipe
Cut avocado in half; remove the pit, scoop out the flesh, and place in a blender or a food processor bowl. Crumble the tofu; add it and the rest of the ingredients with the avocado and process until smooth and creamy. You may need to add a few drops of water and scrape the sides of the bowl. Taste and adjust seasonings if needed. Serve chilled or at room temperature. May be stored covered with film wrap for 2-3 days in the refrigerator. Great as a dip for crudités, or as a side for Tex-Mex meals. Makes 4 1/2-cup servings.
