Prosciutto-Wrapped Asparagus

Recipe Introduction
Cook and wrap the asparagus early in the day, but don’t dress it until just before serving. To distribute the dressing evenly over the asparagus, use a pastry brush, or gently toss the drizzled, wrapped spears by rolling them over each other with your fingertips.
List of Ingredients
24 asparagus spears, about 1½ pounds, trimmed
12 thin slices prosciutto di Parma (6 ounces), halved
1 ½ tablespoons extra virgin olive oil
2 teaspoons grated lemon zest
1 teaspoon fresh lemon juice
¼ teaspoon salt
Pinch pepper
Recipe
1. Bring a large pot of lightly salted water to a boil. Add asparagus and cook until crisp-tender, 2 to 3 minutes. Drain and transfer to a bowl filled with ice water, cool about 2 minutes, then pat dry.
2. Wrap each asparagus spear with one piece of prosciutto. Place lengthwise on a serving tray.
3. Combine oil, zest, lemon juice, salt, and pepper in a bowl; mix well. Use a pastry brush to coat wrapped spears with dressing. Serve immediately.
