IMPOSSIBLE MEXICAN CHICKEN CASSEROLE**

2 cups cut-up cooked chicken
1/2 cup chopped onion
1 (4 oz.) can chopped green chilies, drained
2 cups reduced fat shredded Monterey Jack cheese
1 (12 oz.) can Mexican-style corn, drained
1 package taco seasoning
1 cup Bisquick
1 cup milk
1/2 teaspoon fine sea salt

Pre-heat oven to 350 degrees F. Spray a rectangular baking dish, 11 x 7 x 1-1/2 inches, with cooking spray. Combine chicken, onion, chilies, cheese, corn and half of the taco seasoning in dish. Whisk together Bisquick, milk, salt, the rest of the seasoning and eggs. Pour over chicken mixture. Bake uncovered at 350 degrees F until knife inserted in center comes out clean, about 35 minutes.
Makes 8 servings.
