*Use enchilada sauce with the meat.
List of Ingredients
1 lb. ground beef
1 pkg. (10 oz.) frozen whole kernel corn, thawed/drained -OR- 1 (16 oz.) can of whole kernel corn, drained
1 can (14 1/2 oz.) diced tomatoes, undrained
1 can (2 1/4 oz.) sliced ripe olives, drained
2 Tbls. Original Bisquick
1 Tbls. chili powder
2 tsp. ground cumin
1/2 tsp. salt
1 cup Original Bisquick
1/2 cup cornmeal
1/2 cup milk
1 egg
Recipe
Heat oven to 400 degrees.
Cook beef in 10-inch skillet over medium heat, stirring occasionally, until brown; drain. Stir in corn, tomatoes, olives, 2 Tbls. Bisquick, the chili powder, cumin and salt. Heat to boiling, stirring frequently; boil and stir 1 minute. Keep warm over low heat.
Stir remaining ingredients until blended.
Pour beef mixture into ungreased square pan, 9x9x2 inches. Spread cornmeal mixture over beef mixture.
Bake uncovered about 25 minutes or until crust is light brown.
