    Serves 5 persons

    Ingredients:
    2 lbs. Beef Roast or Beef Skirt to shred
    3 Red Tomatoes chopped
    1/2 large Onion, chopped
    3 Green Serrano Chiles, chopped
    3 Garlic Cloves
    Salt, to taste
    Water, the necessary
    4 tabalespoons Vegetable Oil
    2 cups of Beef Broth from the cooked meat

    Place the whole piece of the meat to cook in a pot, adding water to cover, garlic cloves and salt.
    Cook for about 1 hour and 20 minutes aprox. When the meat is soft and well cooked, remove from
    broth and let it cool. Shred the meat with a fork or fingers and reserve the beef broth.
    Place the oil in a hot saucepan and fry tomato, onion and green chiles chopped, until they are soft.
    Add the shredded meat and cover it with 2 cups of the beef broth reserved. It is important to verify
    the salt before adding more because it could become salty. Let it boil for 10 more minutes.
    Serve with white rice or make tacos placing the shredded meat in warm corn tortillas, flour tortillas
    or to make chalupas - tostadas.
