SIRLOIN TIPS MEXICAN STYLE

Serves 6 Persons aprox.
Ingredients:
2 lbs. Sirloin Tips
3 Garlic Cloves, mashed
1/2 teaspoon fresh ground Black Pepper
1/4 teaspoon ground Cumin
2 teaspoons Salt
2 tablespoons Canola or Vegetable Oil
1 tablespoon Onion, finely chopped
2 Garlic cloves, finely chopped
1-1/2 lbs. red and ripe Tomatoes, chopped
3 Green Serrano Chiles, finely chopped
Recipe
In a large bowl, mix the sirloin tips with the mashed garlic cloves, ground cumin, fresh ground
black pepper and a teaspoon salt.
Cover and refrigerate at least 2 or 3 hours, or all night to marinate the meat well with the spices.
Heat the oil in a saucepan or black iron skillet and fry the chopped onion for about 5 minutes until soft.
Add the other 2 chopped garlic cloves and the marinated sirloin tips with the spices, and cook for about
8 to 10 minutes until the meat is brown.
Add chopped tomatoes and green chiles and the other teaspoon salt. Remove cover and let the meat cook
over medium heat for 10 more minutes until the sauce is thick and the meat is tender and well cooked.
For a Variation of Flavor:
Substitute green serrano chiles for 3 pickled chipotle chiles in vinegar.
