List of Ingredients
½ teaspoon chili powder
1-½ teaspoons ground cumin
1-½ teaspoons minced garlic
¾ teaspoon salt
1-½ teaspoons minced fresh oregano or ¼ treasonous dried
1/8 teaspoon cayenne pepper
1 tablespoon vegetable oil (plus more for pan)
2-3 pound piece London broil, trimmed of fat
½ teaspoon salt
¼ teaspoon pepper
Recipe
Combine chili powder, cumin, garlic, salt, oregano, cayenne pepper and oil. Set aside.
Sprinkle salt and pepper on both sides of meat. Sprinkle spice mixture on one side of meat.
Lightly coat a large skillet with oil and set pan over high heat. When the oil is just barely smoking, add the London broil, unspiced side down. Lower heat slightly and sear meet 3-4 minutes on both sides. Cut into meat to check for doneness. Meat should be a rosy pink color. Do not over-cook or meat will be dry.
Transfer meat to cutting board of serving platter. Squeeze with juice of one whole lime. Slice meat thinly on the diagonal.
May be used for salad ingredients, main dish, or fajitas.
