Apple and Lemon Muffins With Cinnamon

2 cups all-purpose flour
4 teaspoons baking powder
pinch salt
1 apple
10 tablespoons butter
1/2 cup sugar
1 tablespoon lemon peel, grated
2 eggs
1 cup skim milk
1 tablespoon sugar
1 teaspoon cinnamon
Recipe
1. Sift the flour, baking powder and salt into a bowl.
2. Peel, core and chop the apple and toss with the flour and the 1/2 cup sugar.
3. Beat the butter, lemon peel, eggs, and milk together and carefully stir into the flour.
4. Spoon the mixture into 12 well greased muffin pans.
5. Mix the cinnamon (or ginger) and sugar together and sprinkle on the top.
6. Bake at 425 degrees for 15 minutes. Cool in the pans for 1-2 minutes before removing to a wire rack to cool. Enjoy!
