COFFEE CAKE MUFFINS

Cake batter:
1 1/2 cups flour
2 tsp baking powder
1/4 tsp salt
1/4 cup butter (4 Tbsp), room temperature
1/2 cup granulated white sugar
2 Tbsp plain yogurt
1 egg
3/4 cup milk
1/2 tsp vanilla
Spice Mix:
1/2 cup packed brown sugar (I use dark)
2 Tbsp flour
1 tsp cinnamon
1 Tbsp butter
Recipe
1. Preheat oven to 400 F (375 F for dark pans).
2. Grease 6 muffin cups. Add a little water to the empty cups, so the muffins bake evenly.
3. Make Spice Mix: *See variation below. Stir together brown sugar, flour and cinnamon. Cut in the butter until crumbly. Set aside.
4. Make Cake Batter: In a large bowl, mix together 1 1/2 cups flour, 2 tsp baking powder, and 1/4 tsp salt. Make a well in the middle.
5. Cream together 1/4 cup butter, 1/2 cup granulated white sugar, and egg.
6. Add yogurt, milk, and vanilla. Mix till blended.
7. Pour wet mixture into dry mixture. Stir until just blended. DO NOT OVERMIX.
8. Fill 6 muffin cups with batter, around 1/3 full. Sprinkle on 1/2 the spice mix. Cover with more batter; then sprinkle on remaining 1/2 the spice mix. *See variation below.
9. Bake in the middle of the oven about 19 minutes.
*Variation: Stir together all Spice Mix ingredients and omit the 1 Tbsp butter. Fill muffin cups with batter, around 1/3 full; then sprinkle on entire spice mix. Cover with remaining batter.
Makes 6 muffins. Double the recipe to make 12.
