Lemon Raspberry Muffins

3 cups all-purpose flour
1/2 teaspoon salt
1 1/2 teaspoon baking soda
1 tablespoon baking powder
8 tablespoons butter, softened
1 cup granulated sugar
2 eggs
1 1/2 cup sour cream
Juice of 4 lemons (equivalent to 1/2 cup)
Zest of 4 lemons
3 cups fresh or frozen raspberries (do not thaw)
Recipe
Heat oven to 400 degrees. Line 12 muffin tin with paper liners. In large bowl mix together flour, salt, baking soda and baking powder. In another bowl cream butter and sugar. Add eggs and mix well. Add sour cream, lemon juice and lemon zest. Add wet ingredients to dry ingredients, mixing just until moistened. Do not over mix. Lightly fold in raspberries. Spoon batter into paper liners 3/4 full. Bake 25-30 minutes or until golden brown. Cool few minutes before removing from pan.
