    1 cup natural bran
    1 cup skim milk
    1/2 cup oil
    2 eggs
    2 teaspoons vanilla extract
    6-8 medium bananas, mashed
    2 cups whole-wheat flour
    1 cup brown sugar, packed
    5 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/2 cup coconut
    3/4 cup raisins
    1/2 cup sunflower seeds
    1/2 cup chopped walnuts (optional)

    Recipe



    1. Mix the milk and bran and let soak till milk is absorbed.
    2. Add oil, eggs, vanilla, bananas.
    3. In a seperate bowl, combine dry ingredients.
    4. Add to wet ingredients.
    5. use large paper muffin cups and fill almost to the top.
    6. Bake 375.
    7. 20 minutes.
