Pizza w/Chevre, Sundried Tomatoes-Garlic

one head of garlic, 12 to 14 cloves
1/2 cup plus 3 tablespoons extra-virgin olive oil, divided.
One recipe of pizza dough
2 cups (about 8 ounces) shredded mozzarella
2 cups (about 8 ounces) Chevre (goat cheese)
12 sun-dried tomato halves, slivered
1/4 cup minced parsley
freshly ground black pepper
salt
1/4 cup Parmesan cheese, grated

To roast the garlic place the cloves in a small baking dish and toss with the 3 tablespoons of olive oil. Cover the dish and bake in the 300 degree oven for about 30 minutes. Remove from the oven and cool. Peel, slice and reserve.
Pre-heat the oven to 500 degrees. Roll out the pizza dough to fit a 16" pizza pan tucking under the edges. Brush dough with olive oil and top with the mozzarella and chevre leaving about a 1/2-inch border around the edges. Sprinkle with the roasted garlic, tomatoes and parsley. Sprinkle with salt and pepper, to taste.
Place pizza in the lower level of the hot oven and bake for about 10 minutes. Slice and serve.
