Baby Cheesy Bacon Mashers

8 small russet potato
1 cup shredded Cheddar cheese
1/2 cup milk
1 tablespoon butter
2 slices bacon, (can substitute 2 tablespoons bacon bits)
Recipe
Cook bacon and cut into small pieces. Wash potatoes and cut in half to speed cooking time; leave skins on. Boil or microwave potatoes until tender. In a separate sauce pan, heat butter and milk; add cheese and bacon and stir until cheese melts. Drain potatoes (if boiling) and transfer to a large bowl. Mash potatoes to desired texture. Add milk mixture to mashed potatoes and continue mixing until smooth or to desired texture. Salt and pepper to taste, if desired.
