Roasted Garlic, Potato & Rosemary Foil P

2 to 3 red potatoes per person, halved or quartered
3 to 5 cloves of garlic per person, unpeeled
Foil squares (cut into 10-to 12-in. pieces)
Extra virgin olive oil
Salt (kosher or coarse sea salt preferred)
Pepper, coarsely ground
Rosemary sprigs (2-inch long and enough for one sprig per packet) Recipe
Preheat oven to 400*
For each person, place one serving of potatoes and garlic cloves on each square of foil.
drizzle with olive oil, heavily season with salt and pepper, and add a sprig of rosemary.
Fold foil squares in half to form a triangle.
Crease and double-fold edges of the open sides of triangle to enclose contents, folding tips over tightly to be sure that oil will not drip out and air will not escape.
Place packets on a baking sheet and bake for 30-40 minutes, depending on size of potatoes.
Serve each person with own packet to open.
Advise to remove papery garlic skins, which will easily slip off roasted cloves. (the tastiest and most fun way to do this is to place a clove of roasted garlic between your teeth and tug on the garlic skin with your fingers to pull the skin away as the softened garlic cloves pops in your mouth.)
