100 SPICE CARIBBEAN FRIED CHICKEN
List of Ingredients
24 Boneless chicken breast halves (about 9 lb.)
3 cups lemon juice
3/4 cup garlic powder
3/4 cup ground black pepper
1/4 cup paprika
3 Tbsp salt
2 Tbsp ground red pepper
2 cups dark soy sauce
2 cups Louisiana-style hot red-pepper sauce
2 cups All-purpose flour
Vegetable oil as needed
Recipe
Drizzle chicken with lemon juice. Marinate, refrigerated, 15-30 minutes. In bowl, combine garlic powder, black pepper, paprika, salt and red pepper. In shallow bowl, combine soy sauce and hot sauce. Place flour in another bowl. Place chicken a few pieces at a time in seasoning mixture, shaking to coat. Dip in soy-sauce mixture. Coat with flour. Place chicken on pan. Cover; refrigerate until needed. Fry chicken in 1-in. hot oil, covered, 10 minutes. Turn; cook, uncovered, until tender, about 10 minutes. Drain. Per order: Plate 2 chicken breast halves. Serve with fried plantains and cucumber salad, if desired. Yield: 12 portions
