    4 4-oz boneless, skinless chicken breasts
    1/4 tsp salt (optional)
    1/4 tsp freshly ground black pepper
    2 tsp olive oil
    1/2 cup dry white wine
    1/4 cup low-fat, reduced-sodium chicken broth
    2 tsp Dijon mustard
    1 tsp cornstarch
    1 15-oz can artichokes, drained, rinsed, and halved
    1/4 cup sliced black olives
    2 Tbsp minced parsley

    Recipe



    1. Sprinkle the chicken with salt and pepper. Heat the oil in large skillet over medium-high heat. Add the chicken and saute on both sides for a total of 10 to 12 minutes. Remove the chicken from the skillet and keep warm.

    2. Mix together the wine, broth, Dijon mustard, and cornstarch. Add the mixture to the skillet, scraping up browned bits. Stir the sauce until it is slightly thickened. Add the artichokes and olives and cook for 1 minute. Add the parsley. Serve the sauce over the chicken.
