    1/4 cup olive oil
    2 onions, peeled chopped
    1 (3.5-lb.) fresh whole chicken, cut up
    1/2 cup white wine
    1/2 cup coarsely chopped kalamata olives
    1 tablespoon chopped fresh rosemary
    1 tablespoon red wine vinegar
    2 cloves garlic, peeled and chopped
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    Heat the olive oil in a large, heavy-bottomed skillet over medium-high heat. Add onions and sauté until they just begin to soften, about 3 minutes. Add chicken and brown on all sides. Deglaze the pan with white wine, scraping any browned bits off the bottom of the pan and mixing into the wine. Turn heat down, cover and simmer the chicken for about 40 minutes.

    About 10 minutes before the end of cooking, remove lid, turn up heat to medium-high and add the olives, rosemary, red wine vinegar, garlic, salt and black pepper. Serve hot.
