Margarita Chickena and Jalapeno Noodles

List of Ingredients
2-4 chicken boneless chicken breasts
1 to 1 1/2 c. Margarita mix (without alcohol)
2 medium tomatoes, chopped
10 - 15 black olives, slices
1 (8 oz.) pkg. grated co-jack cheese
1 small jar whole jalapeno peppers
1 (8 oz.) light green spinach egg noodles
1/2 tsp salt
Recipe
Saute chicken in small amount chicken boullion until almost cooked through. Cut into bite size pieces and place in margarita to marinate. Prepare vegetables, chop tomatoes, olives and grate cheese. Boil noodles and 4 whole jalapeno peppers with salt until cooked "al dente". Drain and discard peppers. Set noodles aside.
Saute chicken in fry pan until cooked. Toss with noodles. Top with cheese and olives. Place under broiler until cheese melts. Remove and top with tomatoes. Serve immediately. Serves 4.
