    Ruby Tuesday's Smokey Mtn Chicken

    2 whole boneless chicken breasts (with skin)
    veg. or olive oil
    salt
    pinch of dried thyme
    pinch of summer savory
    4 slices deli smoked ham
    2 tbsp. hickory BBQ sauce
    2 slices provolone cheese
    1/2 medium tomato, chopped
    1 green onion, chopped

    Recipe



    Rub chicken with oil and sprinkle with salt and herbs. Grill on hot grill for 4-5 minutes per side, starting with skin side up. After flipping chicken over, wait 2-3 minutes and put ham on the grill. Just heat it thoroughly.

    When the chicken is about 1 minute away from being done, brush with bbq sauce. Stack 2 slices of ham on each breast, then add a slice of provolone on top. Grill until cheese melts. Remove from heat.

    Serve each breast with 2 tbsp. chopped tomatoes, and 1 tbsp. green onion.

    (Makes a great sandwich on hoagie rolls!)
