    Orange-Walnut Pound Cake

    Makes 12 servings

    1 cup butter or margarine, softened
    1 1/2 cups granulated sugar
    4 eggs
    1 1/2 cups all-purpose flour
    1 1/2 teaspoons baking powder
    2 tablespoons grated orange rind
    2 tablespoons orange juice
    1/2 cup chopped walnuts
    1/2 cup light or dark raisins

    1. Preheat oven to 350°F. Grease and lightly flour a 9-inch loaf pan. Bring the butter and eggs to room temperature.

    2 In a large bowl, beat butter using an electric mixer set on medium speed until softened. Gradually add sugar, 1/4 cup at a time, until light and fluffy.

    3 Add eggs, one at a time, beating well after each addition.

    4 In a small bowl, combine flour and baking powder. Using a
    fork, mix until well combined.

    5 Gradually beat flour mixture into egg mixture until just combined.

    6 Stir in orange rind, orange juice, walnuts and raisins. Stir until combined.

    7 Pour batter into the prepared pan. Bake for 50 minutes or until skewer inserted in center comes out clean.

    8 Transfer pan to wire rack. Cool cake in pan for 15 minutes. Remove cake from pan and transfer to wire rack to cool completely.

    Baking Tips
    This cake freezes well. Wrap cooled loaf in a double thickness of foil. Label, date and freeze for up to 3 months. Thaw, wrapped, at room temperature.
