    2 lg. eggs
    1-3/4 cups all purpose flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    2/3 cup low fat (1%) milk
    2 tsp. vanilla
    3/4 cup butter, at room temperature
    1/2 cup granulated sugar
    1/2 cup firmly packed light brown sugar
    1 cup coarsely chopped pecans, toasted

    Separate eggs. Discard yolk from 1 egg. Set aside. Preheat oven to 325. Lightly grease a 9 x 5 x 3 loaf pan, then dust with flour. Stir together flour, baking powder and baking soda. In a cup, combine milk and vanilla.

    Cream butter, granulated sugar and brown sugar in large bowl with mixer on med. until light and fluffy. Add egg whites and beat well. Add the egg yolk and beat well. Stir in 1/3 of flour mixture, then half of the milk mixture. Repeat, then stir in remaining flour mixture. Stir in pecans.

    Spread batter evenly into prepared pan. Bake for 55 to 60 mins. Place pan on wire rack for 10 mins. Loosen side of cake from pan and invert cake onto the rack. Cool completely.

    Serves 16
