Caesar Pork Pockets

1 lb (0.5 kg) lean pork loin strips
1/2 cup (125 mL) bottled Caesar-style salad dressing
4 pita breads
thinly sliced red onion
peeled, seeded and chopped cucumber
bottled cucumber salad dressing
Recipe
Combine pork strips and Caesar dressing in a shallow baking pan. Bake at 450°F (230°C) for about 15 to 20 minutes until pork is lightly browned. Cut pita breads in half crosswise. Wrap in a towel and microwave briefly to warm. To serve, place some of the pork strips in the pita. Top with sliced onion and chopped cucumber. Drizzle with cucumber dressing.
