    Ham 'n Beans w/cornbread

    2lbs. Pinto Beans
    1 to 2 lbs. diced ham
    chopped onion
    desired amount of salt (dash)

    Recipe



    Put beans (2lbs. will more than adequately fill 8 hungry firefighters), diced ham (1lb. for "so so" ham eaters, 2lbs. for ham lovers), half of chopped onion and a dash (or more, if desired) of salt into large pan, and cover all contents with water. Bring to a fast boil, and then simmer for 2-3 hours. If time won't allow, fast boil for 1 to 1 1/2 hours or until beans are tender. You can use an onion substitute such as onion powder or dehydrated onions if fresh ones are not available.

    For the cornbread, follow directions on box of "Jiffy" cornbread for a single box, then double it. Put mixed contents with some added sugar (1 tablespoon should do it) into a large skillet. Bake at 350-400 degrees for 20-30 minutes or until center is not gooey.
