Chicken Marsala, no mushrooms

List of Ingredients
4 boneless, skinless chicken breasts
flour
3 tablespoons butter
2 tablespoons chopped shallots, or
1 tablespoon freshly chopped garlic and
1 tablespoon freshly chopped onion
1/2 cup Marsala Wine
1/4 cup water
1 teaspoon dried parsley
1/4 teaspoon dried rosemary
1/8 teaspoon salt
Recipe
Pound chicken breast halves until 1/4 inch thick. Dredge in flour. Melt the butter in a large frying pan. Add chicken. Cook and brown on each side. Remove to serving platter. Add shallots to pan and cook until tender. Stir in wine, water, parsley, rosemary, and salt. Scrape bottom of pan to get all meat pieces mixed with the other ingredients.(Deglazing) Simmer a couple of minutes. Return chicken to pan and cook until tender and sauce thickened. Stir once so both sides are glazed with the sauce.
Makes 4 servings.
