    FRIED RICE CAKES

    List of Ingredients




    2 beaten eggs
    2 cups cold cooked rice
    4 slices bacon, crisp cooked, drained and crumbled
    1/3 cup finely chopped green pepper
    1/4 cup grated Parmesan cheese
    2 Tblsp finely chopped onion
    1/8 tsp salt
    1/8 tsp pepper
    2 Tblsp cooking oil


    Recipe



    In a bowl, combine eggs, rice, bacon, green pepper,cheese,onion, salt and pepper. Cover and chill at least 1 hour. Using 1/3 cup rice mixture for each, shape into patties about 3 1/2 inches in diameter. In a large skillet, cook patties in hot cooking oil over medium heat, about 5 minutes per side, or until patties are set and golden. Garnish with parsley.


    Makes 6 patties.


    When serving beef or pork roast, substitute these cakes for potatoes.
