    List of Ingredients




    Serves: 4
    Ingredients for salad:
    1 Cucumber, sliced in 1/2 inch chunks
    2 Organic vine ripe tomatoes, sliced in wedges
    1/4 Red Onion, thinly sliced
    1 1/2 Tbsp. Fresh Mint, chopped
    1 cup Fresh Mozzarella, sliced in 1/2 inch chunks
    1/4 cup Wild Oats Olive Oil
    2 Tbsp. Fresh Lemon Juice (about 2 lemons)
    Salt and Pepper to taste

    Ingredients for fish:
    4 6 oz. Halibut Filets
    1 Tbsp. Wild Oats Olive Oil
    Juice from 1 Fresh lemon
    Pepper to taste

    Procedure:
    In a large salad bowl, combine all salad ingredients and let sit in refrigerator until fish is ready to serve.

    In a large sauté pan, heat Olive Oil until oil is hot. Sprinkle pepper on halibut filets. Place halibut in sauté pan and cook on each side for approx. 4-5 min. Color should be a nice golden brown. When fish is cooked all the way through, serve with salad.
