    DRESSING: Roasted Garlic Dressing

    4 large cloves garlic, unpeeled
    1/2 cup Wild Oats olive oil
    3 to 4 tablespoons Wild Oats balsamic vinegar to taste
    1/2 teaspoon salt
    1/4 teaspoon freshly ground black pepper

    Recipe



    1. Put the garlic cloves (still in their papery husks) into a small skillet set over medium heat. Pan-roast, turning garlic occasionally, until golden brown on all sides and soft, about 10 minutes. Cool, then slip off the husks.

    2. Put garlic and remaining ingredients into a blender; process until smooth. Serve at room temperature.
