PAS: Pizza Pasta Salad

1 pound twist pasta
3 medium tomatoes, seeded and diced
1 package (8 ounces) Cheddar cheese, cubed
1 package (8 ounces) mozzarella cheese, cubed
6 scallions, thinly sliced
1 package (3 ounces) sliced pepperoni
3/4 cup vegetable oil
1/2 cup red wine vinegar
1/3 cup grated Parmesan cheese
2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon black pepper
Recipe
Prepare the pasta according to the package directions; drain, rinse, and drain again. Place in a large bowl and allow to cool.
Add the tomatoes, Cheddar and mozzarella cheeses, scallions, and pepperoni to the pasta; toss until well combined.
In a medium bowl, combine the oil, vinegar, Parmesan cheese, oregano, garlic powder, salt, and pepper; mix well. Pour the dressing mixture over the pasta mixture and toss until evenly coated.
Cover and chill for at least 2 hours before serving.
