    SALAD:Ridpath Roof Salad

    List of Ingredients

    DRESSING:
    1/2 cup sugar
    1 tsp salt
    2 tbls Dijon mustard
    1/2 tsp Maggi seasoning (optional)
    1/2 tsp ground black pepper
    1/2 tsp garlic powder
    1 tsp Worcestershire sauce
    2 tbls lemon juice
    3/4 cup Mazola oil
    1/4 cup olive oil
    1/2 cup white wine vinegar

    SALAD:
    2 heads Romaine lettuce (or butterhead lettuce,
    watercress, red lettuce or baby spinach.....green
    onions may also be added)
    1 tomato, diced
    2 hard-boiled eggs, chopped
    1/2 cup julienne sliced beets (canned)
    1/2 cup garlic croutons
    1/2 cup grated Parmesan cheese

    Recipe

    In a small bowl mix the sugar, salt, mustard, Maggi seasoning, pepper, garlic powder, Worcestershire sauce, lemon juice and a small amount of the Mazola oil to make a paste.

    Put remaining Mazola oil in a blender. On low speed, add the olive oil. Slowly add white wine vinegar and paste mixture to the blender. Blend slightly and chill thoroughly. Makes about 2 cups of dressing. To serve, tear lettuce into a large bowl, add diced tomato, chopped hard-boiled eggs, julienne beets, croutons, Parmesan cheese and toss with chilled dressing.

    Yield 12 servings.
