    SALAD:Summer Salmon Salad

    List of Ingredients

    1 15 oz drained, bones and skin removed can salmon
    1 chopped large cucumber
    1/2 chopped cup small red onion
    2 peeled and sliced ripe avocado
    4 large lettuce leaves
    1 cup dill dressing or ranch dressing

    Recipe

    1. Mix chunks of salmon, cucumber, red onion and dressing together. Chill for 30 minutes.

    2. Place lettuce leaves on 4 dinner plates. Place avocado slices (about 1/2 avocado per person) over lettuce.

    3. Top with salmon mixture and serve. Good as a light dinner when served with fresh fruit and garlic bread.
