Warm Greens with Garlic

2 teaspoons olive oil
2 cloves garlic, minced
8 cups packed spinach or beet greens, stems removed and leaves shredded
1/4 teaspoon salt
1/8 teaspoon pepper
2 teaspoons balsamic vinegar
1/2 cup chopped, bottled roasted red peppers
2 cups hot cooked rice
Recipe
In a large skillet heat olive oil over medium heat. Add garlic; cook 1 minute. Add greens; cover and cook about 2 minutes or until tender. Stir in salt, pepper, and vinegar. Stir in sweet pepper and rice. Serve warm. Makes 4 side-dish servings.
